Fennel & Apple Slaw Recipe

One thing I love to make that I’ve never found a comparable shop bought version, is coleslaw. This fennel version, is fresh, light and full of flavour. Adding the pomegranate seeds adds some much needed vibrancy which I miss at this inbetween time of year where it’s not still winter not yet spring. If you’ve never made your own slaw I urge you to give it a go, yes there’s some chopping and slicing involved but you won’t go back to shop bought once you’ve made your own. Recipe at the end.

Serves 4

For the Slaw

1 large fennel bulb thinly sliced
1 large carrot, thinly sliced (I used a peeler)
1/2 red onion, thinly sliced
3 tbsp pomegranate seeds
1 apple cored, quartered and thinly sliced
small bunch of dill

For the dressing

3 tbsp soured cream
1 tbsp wholegrain mustard
Juice of half a lemon
small bunch of dill
salt and pepper to taste

Optional

Caper berries to garnish

Slice the fennel and keep it in a bowl of cold water until ready to use. Slice the apple and place in a bowl with a little lemon juice, toss to coat the apple. Add the carrot, onion, pomegranate seeds and dill. In a separate bowl mix together all the ingredients for the dressing. Drain the fennel add to the bowl with the slaw ingredients. Spoon over the dressing and mix well until everything is evenly coated. Serve with a little extra dill to garnish and caper berries.
