Breakfast

potato_029I might have mentioned that I’m not a fan of eating breakfast at breakfast time. I can’t get up and devour anything, it’s a coffee (or three) until the day is underway and then I’ll think about food. But I do adore breakfast dishes, so I don’t want to miss out altogether you might just need to wait for me to catch up.

Very occasionally, I make an indulgent all in one breakfast in a skillet, just for me, I could share it I suppose but sometimes I just don’t want to!

I found this walnut and date sourdough in Waitrose and it was so delicious, it not only inspired this breakfast dish but it has also inspired me to go on a Sourdough making course in a few weeks time, I’m not sure I’ll be making anything as exciting as this but I can’t wait to learn a little more about the process.

So it’s Sunday, I hope you have a little indulgent time today enjoy it, if you’d like the recipe it’s at the end of this post.

Ingredients

Fresh tomatoes
Big handful of mushrooms
1,2 or 3 eggs
Slices of fresh bread (my choice was date & walnut sourdough)
Fresh Rosemary
A sprinkle of sweet paprika
salt + pepper
Olive oil

What to do…
Heat the oil, add the mushrooms, cook for a few minutes add a little bunch of rosemary
Add the tomatoes and cook until almost done. Remove and set aside.
Add the slices of bread for a minute or 2 on each side to crisp and soak up the juices. Remove and set aside.
Add a little more oil if needed return the mushrooms, toms and bread. Crack open the eggs cook until the whites are set and the yolk is just how you like it.
Sprinkle with sweet paprika, salt and pepper
Transfer to a plate or eat from the skillet (without burning yourself)
