I might have mentioned that I’m not a fan of eating breakfast at breakfast time. I can’t get up and devour anything, it’s a coffee (or three) until the day is underway and then I’ll think about food. But I do adore breakfast dishes, so I don’t want to miss out altogether you might just need to wait for me to catch up.
Very occasionally, I make an indulgent all in one breakfast in a skillet, just for me, I could share it I suppose but sometimes I just don’t want to!
I found this walnut and date sourdough in Waitrose and it was so delicious, it not only inspired this breakfast dish but it has also inspired me to go on a Sourdough making course in a few weeks time, I’m not sure I’ll be making anything as exciting as this but I can’t wait to learn a little more about the process.

Big handful of mushrooms
1,2 or 3 eggs
Slices of fresh bread (my choice was date & walnut sourdough)
A sprinkle of sweet paprika
salt + pepper
