Baked Butternut Squash, Ricotta & Spinach Recipe

A few weeks ago I had to find a way to use up lots of bananas and a giant butternut squash which had been lurking for some time and was making feel anxious that it was going to go bad before I managed to summon up the energy to peel and cut it! After trawling through Pinterest  I recreated this dish from Delicious.com a baked Butternut Squash, Spinach and Ricotta dish followed by an Upside Down Banana Cake from Donna Hay

Both turned out perfectly, the banana cake was moorish and playful, the kind of cake you can just throw together on a Tuesday afternoon for when the little ones come back from nursery and have for breakfast the next morning because banana is a breakfast food, isn’t it?! The butternut squash was a creamy, sweet, healthy dish one I could keep going back to without getting bored.
